Happy Friday friends! Today I’m sharing a recipe that I’ve been hesitating to share. Why you ask? Well, because it’s just not a pretty looking dish! But, you guys my kids seriously request a Mac N’ Cheese & Egg Mash Bowl every few days! This is such a great after school snack or lunch option for kids! And honestly, I enjoy it too!

How did our Kids Mac N’ Cheese & Egg Mash Bowl come to be? Well, a few years ago, one of my kids favorites was Mac N’ Cheese and the other kid was on an egg kick! When my kids eat Mac N Cheese I generally like them to have something with it that has some protein! So, one day I was making scrambled eggs and mac n’ cheese at the same time and I decided to just put them together! Since then, we’ve created all sorts of variations of it! You can add shredded cheese, veggies, chicken, bacon, hot dogs – really anything! My kids favorite addition to the mash is grilled chicken!

Ingredients:

1 box Horizon Organics Classic Mac
5 Horizon Organics Eggs (scrambled)
salt (to taste)
pepper (to taste)
1/4 Cup of Horizon Organics milk
2 Tbs Horizon Organic unsalted butter

Add in options:

Grilled Chicken
Hot Dogs
Bacon
Ham
Zucchini
Yellow
Squash
Asparagus
Peas
Shredded Cheese

Directions:

Prepare the box of Horizon Organics Class Mac according to the package! The only thing I change is I try to use a little less milk than suggested. That way when the eggs are added, it’s not such a runny mash.

In a small whole, crack the 5 eggs and combine it with 1/8 of a cup of Horizon Organics milk and mix using a fork, until ready to scramble.

In a pan, scramble the eggs!

Once the eggs are scrambled mix in the Horizon Organics Classic Mac!

Add any additional mix-ins: grilled chicken, shredded cheese, veggies, etc. Salt and Pepper to taste!

As mentioned, my kids generally request grilled chicken!

When school is in, I like to make a big batch for my daughter for lunch and then my boys can warm some up when they walk in from school! Makes a super easy and nutritious after school snack!
