One of my husbands most favorite treats are Bakerella’s Mini Cheesecakes! They are nothing but a hit wherever I take them! So, if you’ve never made them, then I highly suggest you run out and buy the ingredients and get making them for your loved ones ASAP!
When Bakerella shared this treat, the 2″ cupcakes were kind of the thing. Now, the liners are super hard to find. So, I’ve adapted the recipe to work using Mini Nilla Wafers, Mini Cupcake Liners and a Mini Cupcake Pan.
2 pkg. of (8oz.) cream cheese, softened to room temperature
3/4 cup sugar
1 Tbsp vanilla
1 Tbsp lemon juice
Mini Vanilla Wafers
Preheat oven to 350!
Beat the Cream Cheese, Sugar, Eggs, Vanilla and Lemon Juice together until well combined.
Take your Mini Cupcake Pan and Mini Cupcake Liners (easily found in the party isle at WalMart) and place a Mini Vanilla Wafer in the bottom of the mini cupcake liner.
Spoon approx 2 Tablespoons of filling into each cupcake liner!
Bake for 15-20 minutes until the edges of the top are barely starting to brown.
Serve w/ any topping. Some of our favorites are Raspberry Jam and Cherry Pie Filling. But, they are seriously so cute that you can eat them plain!
I like to store mine in a empty cake pan and refrigerate when not eating!
