Here is a quick easy snack that is sure to make you look like a Mom rock-star this summer!
These are super easy to make and pretty healthy! I made Jell-O Jigglers to use as the ocean and followed the recipe on the box. Once they were ready I set the pan in hot water for a couple of minutes to loosen the bottom and then cut them into small squares.
I broke a banana off the bunch and cut the end to make a nice nose end.
I cut the banana in half, a little bit on an angle so they would stand up and not fall forward. Then it was as easy as cutting into the end to make a mouth and marking the eyes with a sharpie. I added a grape in their mouth to create the look like they are playing with a ball. Then I added the Jell-O squares around the bottom to make the ocean.
It took me less than 5 minutes to put them together.
When I took the plate to my kids outside they were so excited. Huge Mom points for something so simple!
This is such a fun idea for summer! Octo-pops!
My kids loved them! They are super easy to make too. Here is what you need:
- Pineapple juice (or another juice if you prefer)
- gummy worms
- Popsicle sticks
- plastic cups
Now here is where you do as I say, not as I did! You need to buy long gummy worms. I had to go to a gas station to get mine because the kind at the grocery store (pictured above) were too short to stay in the cup to freeze. You can see here they have to be long enough to stay in the cup when you freeze them.
After you put them worms in the juice poke a stick in the saran wrap and and cover over the cups with the worms.
Freeze overnight and then enjoy!
Here is a yummy Easter after school snack that comes together in about 5 minutes! All you need is:
- Vanilla Almond Bark
- Mini Cadbury Eggs
- Shredded Coconut
You can also add things like pretzels, M&M’s, nuts, or any other treats you want to add. To make it you need to pop your popcorn. I prefer to air pop mine. Melt the almond bark in the microwave. I use 6 squares for 1 big bowl of popcorn. Slowly pour the melted chocolate over the popcorn and stir as well as you can, be sure not to smash the popcorn. I reserve just a little of the chocolate for the candy.
Spread the popcorn over a cookie sheet, foil, or waxed paper in a thin layer. Shake sprinkles all over with some coconut. Slowly turn popcorn over and add more sprinkles and coconut. Lastly add the mini Cadbury eggs.
Allow to cool for 30 minute or more until the chocolate cools.
Yesterday we canned peaches and today I want to share with you how to make fruit leather that is fresh year round. When I first tried fruit leather I couldn’t do that many batches, because it takes about 12 hours in the dehydrator. Instead I decided to freeze the mix and try using it another time. It worked great! About each month I would thaw a bag out and dehydrate it and we had leather year round!
Here is how you make it. First, peel your fruit and while you are peeling it, keep it in water that has a little bit of fruit fresh in it so that the fruit doesn’t get brown.
Next strain the fruit.
Then add fruit to your food processor or blender.
The recipe for making fruit leather is:
5 cups pureed fruit
5 tsp Fruit-Fresh
1/4 – 1/2 cup sugar, if needed
After you mix the fruit, fruit fresh, and sugar you can add it to your trays and put them in your dehydrator. Or you can save the mix in a gallon sized freezer bag. Turn the top of the bag inside out. This helps reduce the mess.
Pour the fruit into the bag, I do one batch per bag.
Then seal the bag up with as little air as possible.
Then you just freeze the bags. I lay them one on top of one another in the freezer and make sure they are nice and smooth.
Once they are frozen they don’t take up a lot of space and they can be turned any way or stacked upright.
When we run out of fruit leather I just thaw another bag out and make a new batch, all with my free summer produce!

Caleb found a recipe for Scooby Snacks in one of his books and wanted to make them.
I had to adjust the recipe a little bit for us to eliminate the walnuts but they were easy to make. We used cooking spray for our counter instead of using flour to roll it out so we didn’t dry the dough out. Caleb did all of the rolling and pressing the dog bone shape into the dough but I needed to put them onto the greased cookie sheet with a spatula.
They were a huge hit with our kiddos and I was pleasantly surprised by how good they tasted. They really look like dog bones -which I know is the point but still its a little hard to eat a dog bone 🙂
2 c flour
1 c oatmeal
1/2 c sugar
1/2 c cocoa
1/2 c butter, softened
1/4 c milk
4 tsp vanilla extract
2 tsp almond extract
Its important to preheat with this recipe so be sure to preheat oven to 350. Mix ingredients in mixer until combined. Spray a clean counter with cooking spray and roll dough out to 3/4 inch thick. Cut with cookie cutter shape. Carefully use a spatula to place on a greased cookie sheet. Bake at 350 for 8 minutes.
