This is the best fall cookie hands down! Thank you to Geoff and Jodi for introducing our family to this treat. They changed our world! They are addictive so watch out! I have included a printable version of the recipe at the end of the post. You can also leave the glaze off and they are still awesome!
First cream together the shortening, butter, and sugar.
¾ cup shortening
¾ cup butter
2 cup sugar
Then add 2 eggs and ¼ cup molasses.
Sift together dry ingredients in a separate bowl, mix, and add to the wet ingredients.
4 cup flour
2 tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
1 tsp ginger
Once its is completely combined, chill for one hour.
While the dough is chilling mix together the sugar coating – about 1 cup sugar to 2 tsp cinnamon
Roll about 1-2 Tbsp into a ball, depending on how large you want your cookies.
Then roll the dough ball into the cinnamon sugar mixture.
Bake at 350F for 8-10 minutes. Cookies are ready to remove when the top of each cookie is cracked. While the cookies are baking mix the vanilla icing:
¼ cup water
2 cups powdered sugar
½ tsp vanilla
Dash of salt
Baste over the cookies after they have cooled for a few minutes. Enjoy!!!
