I’ve got the perfect summer cookie for you today! It has the slight tang of lime with the sweetness of white chocolate. They are delicious with a soft inside and slightly crisp outside. The dough freezes really well too which is awesome because you can make a batch and bake just as many as you need and freeze the rest for later.
White Chocolate Lime Cookies
Ingredients
- ⅔ c butter softened
- ⅔ butter crisco
- 1 cup white sugar
- 1 cup brown sugar
- 2 tsp vanilla
- 2 eggs
- 1 tsp salt
- 1 tsp baking soda
- 2 Tbsp lime zest
- 2 cups white chocolate chips
- 3 ½ cup flour
Instructions
- Cream softened butter, shortening, and sugars. Add salt, baking soda, vanilla, eggs. Mix thoroughly but do not over mix. Add chocolate chips, lime zest and mix again. Add in flour. Mix until just combined. Drop onto cookie sheet in a golf sized rounds. Bake at 350 for about 10 minutes or until the tips and edges are just starting to brown.
