To make the mini German pancakes you are going to need 2 cupcake pans. Begin by putting a little slice of butter in each cupcake spot. Between the two pans I use about ½ cube of butter. Get the oven preheating to 375 degrees and put the cupcake pans in the oven to melt the butter while it is heating up.
While the oven is preheating, blend together the eggs, flour, milk, sugar, salt, vanilla and food coloring. You can do this by hand, with an electric hand beater or using a blender.
Once the butter is melted, evenly distribute the batter to fill all the cupcake spots a little more than half way full. Cook for approx 10 minutes at 375 or until the edges are lightly browning!
Serve with syrup, powdered sugar and rainbow sprinkles to bring in the St. Patrick's Day theme! Enjoy!
