Best Broccoli Cheese Soup
This Broccoli Cheese Soup is the BEST! It's creamy with chunks of vegetables that help create the perfect texture!!

Servings: 6 people
- 1 13 oz can Chicken Broth
- 1 Onion small, diced
- 1/3 cup Flour
- 1/4 cup Butter
- 1/2 tsp Pepper
- 2 cups Milk or Half in Half if preferred
- 1.5 cups Sharp Cheddar Cheese shredded
- 1/2 cup Swiss Cheese shredded
- 1.5 cups Cauliflower steamed & chopped
- 1.5 cups Broccoli Florets steamed & chopped
Simmer chicken broth and chopped onion for 15-20 minutes in a covered small saucepan, until onions are soft.
Heat milk in microwave for 1-2 minutes. In a separate medium-sized stockpot, melt butter then add flour and pepper.
Cook together for a couple of minutes, then whisk in warmed milk. Stir and heat together on medium-high heat until soup starts to thicken.
Next, add chicken broth and continue to stir until well blended. Add cheeses and steamed broccoli and cauliflower. Serve immediately.
