This Corn Casserole recipe is so easy to make and a much more substantial side dish to serve versus a bowl of loose corn. It's the perfect side dish for your big holiday meals like Easter, Thanksgiving, and Christmas. I also love to serve it with Chili or Taco Soup!
Preheat your oven to 350 degrees and grease a shallow medium baking dish. Put all the ingredients in a large mixing bowl: the Jiffy box mix (not prepared, just the powdered mix), can of cream style corn, niblets, 2 beaten eggs, ½ cup melted butter (1 stick), and 8 oz of Sour Cream. Optional: Add a 4 oz can of Diced Green Chilis for added flavor.Using a large spoon, combine all the ingredients together until everything is well incorporated.Pour corn mixture into a shallow baking dishBake at 350 degrees for 1 hour to 1 hour and 15 minutes. Just until the top is well browned and a toothpick comes out of the center clean.
