Instructions
First, you'll want to prepare your Pizza Dough or buy a store-bought pizza dough! My family loves this Kamut Pizza Dough from the Food Nanny. If you don't have Kamut flour, consider making their Basic Pizza Dough.
Next, prepare your toppings! Below is a list of ideas for your toppings for the Rainbow Pizza:RED: Pepperonis, tomatoesORANGE: orange pepperYELLOW: pineapple, yellow pepperGREEN: green pepper, spinach, green onionsBLUE: I could not find anything blue, so we used olivesPURPLE: purple onionFor the ends of the rainbow we used Green Peppers to make Clovers!
Roll out your dough into either a large pizza or individual-sized pizzas. You'll want to have the surface you're rolling your dough out on well-floured so it won't stick. If you're making homemade dough, the recipe you're using will most likely tell you how many full sized and individual pizzas you can get out of the recipeSpray your baking sheet well with cooking spray or wrap it in tin foil and then still spray it well with cooking spray. After it is rolled out, quickly transfer it to your baking sheet to dress it with your toppings..
Layer on the pizza sauce, cheese, and toppings to create a rainbow! Start with the top of the rainbow and work your way down. Make sure to leave room for the clovers at the end of the rainbow!
If you're making the Clover Pizza, omit the rainbow toppings and creation. Cut a Green Pepper into slices to create clovers. Choose Green Peppers with deep ridges, for the clover shape, will be more dramatic. Disperse the "clovers" all over the top of the pizza.
Cook the pizza at 500 degrees for 5-7 minutes! Keep a watch on it, the cooking time will vary depending on where you live.
