Caribbean Rice and Beans

This is one of our family’s favorite recipes. Caribbean Rice and Beans 11 Its perfect for those nights when you realize is 5:00 and you forgot to thaw meat out! My husband hates green peppers and celery and yet he loves this dinner so don’t let that dissuade you. The flavor combo is really unique and delicious! Here is what you need: Caribbean Rice and Beans 1 ½ c green pepper, diced 3 cloves garlic, minced ½ c celery, diced 1 c onion, minced 1 can black beans, drained 1 c tomato, chopped ⅛  tsp. salt ¼ tsp. red pepper ¼ tsp. cumin Cooked rice 1 c mozzarella cheese First chop your onions and garlic very small. I’m lazy  and use my food processor. Caribbean Rice and Beans 2 Place those in a large saucepan. Caribbean Rice and Beans 3 Next dice your green pepper, celery, and tomatoes. I chopped mine ahead of time while the kids were at school. Then at 5:00 during the homework/after school rush, dinner was way easier to make and take care of. Caribbean Rice and Beans 4 Add celery and green peppers to onions and garlic. Drizzle with olive oil and sauté. Caribbean Rice and Beans 5 I cook them until the onions start to brown. Caribbean Rice and Beans 6 Turn to low and add drained black beans and spices. The red peppers gives it spice so judge that based on your own tastes. Mix well. Last of all add the tomatoes  and let cook for a just a few minutes so they are warm but not mushy. Caribbean Rice and Beans 7 Serve over rice and top with mozzarella cheese.Caribbean Rice and Beans 8

Ingredients

  • 1 c chopped tomato
  • 1 c onion
  • ⅛ tsp salt
  • ½ c celery
  • ¼ tsp red pepper
  • ½ c diced green pepper
  • ¼ tsp cumin
  • 3 cloves garlic minced
  • 1 can black beans
  • Cooked rice
  • 1 c mozzarella cheese

Instructions

  • Heat 1 Tbsp olive oil in a skillet and add onion, celery, bell pepper, and garlic and sauté until tender. Add tomatoes, salt, red pepper, cumin, and black beans and sauté for 2-3 minutes. Scoop rice onto plate, top with black bean mixture, and then top with cheese.

      We use hot rice. The cheese melts and its so yummy!

        That’s what I thought….This is my new favorite! Doubled it up for a Super Bowl party tonight and it was a big hit! I could eat this every day and never tire of it! Thank you so much 🙂

    How much rice do you use? I am excited to make this tomorrow with some leftover rice, but didn’t know if it would be enough. It would be great if you would let me know what you usually do so I can get a good estimate. Thanks!

      Sorry I have not been getting notifications of new posts. My family uses about 2 1/2 cups of uncooked rice.
