These Lemon Bars are the best. It is the crust that really makes them amazing. It is soft and buttery and with the tartness of the lemon it is perfect. This recipe comes from the Lionhouse Entertaining cookbook and I promise it will not disappoint.
Crust:
1 ¼ c butter
2 ¼ c flour
½ c powdered sugar
Filling:
4 eggs
4 Tbsp flour
6 Tbsp lemon juice
1 tsp baking powder
2 c sugar
Preheat oven to 350. Put softened butter in a mixer and add the rest of the crust ingredients, mix until combined. Spread dough evenly in a 9 x 13 pan. Bake for 10 min or until crust is starting to get a light golden brown.
For filling add dry ingredients to a small bowl and whisk together until combined. Add eggs and lemon juice and whisk slowly until just combined, do not mix it hard because putting air into it will make it come out weird. Im not kidding here folks, mix slowly and just until combined. Pour on top of hot crust. Bake for about 30-35 minutes. Allow to cool slightly and then dust with powdered sugar. This recipe can easily be cut in half and done in a 9×9 pan.
