Happy Friday friends! Today I’m sharing with you what my family calls MEGA SALAD! It’s the PERFECT green salad! I can’t tell you how many compliments I get on this salad! I have literally received handfuls of calls from friends after our get togethers wanting to know exactly what I put in it! It seems so simple, it’s just a green salad after all, but for some reason this combination really makes the perfect Green Salad!
Today I am going to share with you all the yumminess I put in it!
Mega Salad - The Perfect Green Salad!
Ingredients
- Spinach
- Cucumber
- Tomatoes
- Shredded Colby Jack
- Craisins
- Shredded Carrots
- Avocados
- Shaved Almonds
- Mandarin Oranges
- String Cheese - cut up
Instructions
- The amounts depend on how large of a salad you are putting together, so for the most part you just have to guesstimate based on the amount of Spinach you have.
- If I am making a large bowl for a get together I would put these approx amounts: 1 large bag of Spinach, 1 cup shredded carrots, ¼ cup shredded Colby Jack, 1 large cucumber, ¾ cup Craisins, 1 can of Mandarin Oranges, ¾ cup sliced almonds, 2 tomatoes and 2 avocados.

Good salad. I put the stuff you listed plus other veggies and lots of cheese in mine. I’m not into fruits and nuts in my salads so I leave them out. To each his own.

Oh dear – you consider this a perfect salad? Yikes. First – eliminate the cheese – dairy in any form is not good for you. It’s big business, people love the taste of it but it is high in fat and you can get calcium from a million better places. Two – Craisins – really? Dried fruit is exceptionally high in sugar. Craisins are candy. Use blueberries or strawberries instead of this junk food-yep-it’s junk food. Three – too many nuts. Use walnuts instead which are wonderful and ‘creamy tasting and better for your heart. Two whole walnuts chopped for a big salad is plenty. Canned oranges-really? High in sugar, BPA in the can. How about a fresh piece of fruit instead-oranges are readily available. Reduce the amount of avocado – a good food, but high in fat. Mix the greens and add some shredded radichio. (Mesclun mix, baby kale, arugula) Add radish – peppery! Lovely with fruit. Carrots of course are good. Cukes and tomatoes – lovely. I would add some whole grains like – 1/2 cup of cooked buckwheat or farro, and always – some chickpeas or black beans. A much healtheir salad lower in fat and sodium. Dressing? Blend some chickpeas, add juice of a lemon, a little salt and pepper and garlic – water down a bit to pour. Favourite chopped herbs. Yum. There is not a single dressing on the shelves that’s healthy.
