Hey friends! Happy Monday! A few weeks ago I got this major lemon craving. I’m assuming it is because it had FINALLY warmed up here in Northern Utah! And lemon is the perfect summer flavor, right? Well all of a sudden this Lemon Crinkle Cookie popped in my head! I had a friend introduce me to this cookie probably like 3-4 years ago and I had sort of forgot about it. So, I immediately pulled out the recipe and made it! It had probably been 2 years since I made them last and oh how I missed this tasty cookie!
These cookies are the perfect light treat on hot summer evenings and are beyond easy to make!
INGREDIENTS:
- ½ cup butter, softened
- 1 cup white sugar
- ½ teaspoon vanilla
- 1 egg
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 ½ cups flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ⅛ teaspoon baking soda
- ½ cup powdered sugar
DIRECTIONS:
Preheat oven to 350 degrees. Grease a light colored baking sheet.
In a large bowl, cream the butter and sugar until they are combined and light and fluffy! Add in the vanilla, egg, lemon zest and juice. Mix well. Add the flour, salt, baking powder, and baking soda. Mix together just until combined. Do not over mix.
Pour the powdered sugar onto a plate. Create cookies my making a heaping tablespoon into a ball. Then roll the ball into the powdered sugar, until the dough ball is coated! Place on a baking sheet and repeat with remaining dough.
Bake cookies for 9-11 minutes. The bottoms of the cookies should just begin to brown. Remove from oven and cool for 2-3 minutes before transferring to a cooling rack.
