You guys – I am so excited to share this little dessert with you! I actually was introduced to it by a friend! All I can say is that the very first time I saw this treat sitting on the buffet table, I fell in love! Like to the point that I told a handful of friends about it the next day! Haha! Literally though – how can something so simple, be THAT delicious!
The best part about being the one to serve it is that it is so quick to put together! I literally made nearly 100 of these in about ½ hour! Here’s how I did it:
I made the Cream Cheese frosting (recipe below) and allowed it to cool in the fridge overnight. If you want to make it the same day, that is fine, I would just give it time to cool in the fridge for a couple hours to fully set, before you pipe it onto the cookie. If the frosting is too soft, then it won’t pipe on pretty. If you let it refridgerate overnight, then be sure and take it of the fridge for 30 mins to an hour before you are going to use it. It needs to be soft enough to pipe.
To assemble all you do is pipe a cute circle of the Cream Cheese frosting onto to each Lorna Doone and then top them off with a nice looking raspberry! THAT’S IT!
I suggest only assembling them up to an hour before you are going to serve them. If they sit too long, then the cookie may become a little soft or soggy.
Cream Cheese Frosting
Ingredients
- 2 - 8 oz packages of Cream Cheese
- 2 Cups of Powdered Sugar
- ½ Cup Butter
- 1 teaspoon of Vanilla
Instructions
- Allow Cream Cheese and Butter to soften and cream together. Add in the vanilla. Gradually add powered sugar to the mixture.
- Refrigerate when not using.
