ST.PATRICKS DAY SUGAR COOKIES
Hi! I’m Alli from Cupcake Diaries and I’m thrilled to be here participating in this fun St. Patrick’s Day series. Coming from an Irish family, I’m all about celebrating this holiday and making it fun for my kids!
Sugar cookie bars are one of my favorites! I bake them and I can’t get enough. I made my husband take the leftovers of these bars to work, because I knew I would eat them all. They’re THAT good.
This treat is perfect for serving a crowd, or you can cut the recipe in half and put it in a jelly roll pan if you don’t need as many. They’re easy to serve and so yummy!
CAN YOU FREEZE SUGAR COOKIE DOUGH?
One reason I love this recipe is because I can make the dough ahead of time and freeze it. It’s super easy to free. Tightly wrap the sugar cookie dough in plastic wrap, then freeze. Then when you’re ready to use it, thaw it overnight. Then press it in the pan or roll it out to cut cookies out.

St. Patrick's Day Sugar Cookies
Ingredients
- 1 c. butter softened at room temperature
- 2 c. sugar
- 4 eggs
- 2 tsp. vanilla
- 1 tsp. salt
- ½ tsp. baking soda
- 5 c. flour
For the Frosting
- 5 c. powdered sugar
- 1 c. butter softened at room temperature
- ¼ - ½ tsp. almond extract
- 6 Tbsp milk
- green food coloring
- St. Patrick's Day sprinkles
Instructions
Sugar Cookie Bars Instructions:
- Grease a standard rimmed cookie sheet (about 12x17) and set aside.
- Cream together butter and sugar on medium speed. Add eggs one at a time, allowing each egg to be incorporated into the mixture. Scrape the sides of the bowl and add vanilla; mix well.
- Whisk together salt, baking soda, and flour in a medium bowl. Slowly add to the sugar mixture until just combined.
- Press the dough evenly into the greased cookie sheet. Bake at 375° for 15 minutes until very lightly golden. Remove from oven and set aside to cool.
Frosting Instructions:
- Prepare frosting by using an electric hand mixer to beat the butter until smooth. Then add 4 Tbsp milk, a small amount of food coloring, and almond extract; mix together.
- Add powdered sugar about a half cup at a time to avoid a mess. Add remaining 2 Tbsp milk and combine. At this point you can add more food coloring if you want to darken the color of the frosting.
- Frost sugar cookie bars and immediately add sprinkles. Cut into about 36-40 bars. Store in an airtight container.

Great recipe, however, ads clutter the screen so badly they go over the recipe and you can’t click them away, since they are under the text for the recipe. Because of this, it was VERY difficult to see what the ingredients and instructions were. Tried on my phone, tablet, and computer but they all had ads that you can’t remove covering the text.
