These Fudge and Mint Brownies are beyond delicious! They’re rich, moist and full of flavor! We enjoy them year around, but always for St. Patrick’s Day!
Happy Friday friends! March is one of those months that can get a little boring if you let it! You’re waiting for the weather to really warm up, for Easter to come, for the end of the school year to get closer!! St. Patrick’s Day doesn’t have to be super crazy, but there are a few fun things that I like to incorporate into our month as a tradition!
One of those traditions is to make my mother-in-laws A-MAZING Fudge and Mint Brownies! I have tried a few versions of Mint Brownies and this recipe is far more moist then the others I’ve tried. I’m a much bigger fan of fudgy brownies over cake like brownies!
It’s a super basic brownie recipe, with a few extra steps that take this recipe to the next level of brownies! And for those of you that don’t love a strong mint flavor, then these are safe for you! The mint flavor is not overwhelming AT ALL!!

ST. PATRICK’S DAY MINT BROWNIES
Mint Fudge Brownies
Ingredients
Base
- 1 cup Flour
- ½ cup Butter
- ½ tsp Salt
- 4 Large Eggs
- 1 tsp Vanilla
- 1 can 12 ounces chocolate-flavored syrup
- 1 cup Sugar
Filling
- 2 cups Powdered sugar
- ½ cup Butter
- 1 tbs Water
- ½ tsp Peppermint Extract
- 3-4 Green Food Coloring
Topping
- 1 package 10 ounce chocolate chips (Semi Sweet or Milk Chocolate - your choice)
- ½ cup Butter
Instructions
Brownie Base
- Mix together all ingredients by beating at medium speed for approx 3 minutes. Pour the batter into a greased 9x13 pan and bake at 350 for 30 minutes.
Mint Filling
- Combine all the filling ingredients in bowl and beat until creamy. Spread over cooled brownies. Refrigerate until set.
Chocolate Topping
- Melt the chocolate chips and butter microwave in 30 seconds increments, stirring each time, until fully melted and smooth. Spread over cooled filling and chill again.
