Fudgey Mint Brownie Recipe

Get ready to indulge with my Fudge and Mint Brownies! This recipe takes a straightforward brownie to new heights with just a few extra steps, resulting in a dessert that’s far more moist and fudgy than other brownie recipes.

Perfect for those who prefer their brownies rich and chocolatey over cake-like, and for those cautious of overpowering mint flavors – my recipe strikes the perfect balance. The mint is subtle, adding just a hint of freshness without overwhelming your taste buds.

Whether you’re a brownie purist or an adventurous baker, these brownies are a great choice for all, making them a year-round treat. But, I especially love making them for St. Patrick’s Day.

Chocolate Mint Brownies Ingredients:

  • Flour: Provides the structural base for the brownie, ensuring they hold together while remaining tender.
  • Butter (for brownie batter): Adds moisture and richness, contributing to the brownie’s dense and fudgy texture.
  • Salt: Enhances the chocolate flavor in the brownie, creating a well-balanced sweetness.
  • Large Eggs: Act as a binding agent, giving the brownies a stable structure and a rich texture.
  • Vanilla Extract: Complements the chocolate flavor in the brownies with its warm, sweet notes.
  • Chocolate-flavored Syrup: Infuses the brownies with a deep, intense chocolate flavor, making them extra rich.
  • Sugar: Sweetens the brownie batter, contributing to the brownie’s soft and chewy texture.
  • Powdered Sugar (for frosting): Creates a smooth and spreadable mint frosting, adding a contrasting sweet layer.
  • Butter (for frosting): Gives the mint frosting a creamy, rich texture that pairs well with the dense brownie base.
  • Water: Adjusts the consistency of the mint frosting, ensuring it’s easily spreadable.
  • Peppermint Extract: Provides a refreshing mint flavor to the frosting, contrasting with the rich chocolate brownie.
  • Green Food Coloring: Adds a visually appealing green hue to the mint frosting, enhancing the minty theme.
  • Chocolate Chips: Melt into the brownie, creating gooey chocolate pockets for a luxurious texture.
  • Butter (for chocolate topping): Helps create a smooth, rich chocolate topping that solidifies upon cooling, adding another texture to the dessert.

How to make Mint Chocolate Brownies

Brownie Base:

  1. In a mixing bowl, combine all the brownie base ingredients.
  2. Beat the mixture at medium speed for approximately 3 minutes, ensuring that the ingredients are well incorporated and the batter is smooth.
  3. Grease a 9×13 inch baking pan.
  4. Pour the brownie batter into the greased pan, spreading it evenly.
  5. Preheat your oven to 350°F (175°C).
  6. Bake the brownie base in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out mostly clean.
  7. Remove from the oven and let it cool completely in the pan.

Mint Filling:

  1. In a separate bowl, combine all the mint-filling ingredients.
  2. Beat the mixture until creamy and smooth.
  3. Once the brownie base has cooled, spread the mint filling evenly over the top.
  4. Refrigerate the brownies with the filling until the filling is set and firm to the touch.

Chocolate Topping:

  1. In a microwave-safe bowl, combine the chocolate chips and butter for the topping.
  2. Microwave in 30-second increments, stirring after each interval, until the mixture is fully melted and smooth. Be careful not to overheat.
  3. Let the mixture cool slightly, just enough so that it is still pourable but not too hot.
  4. Pour the chocolate topping over the set mint filling, spreading it gently into an even layer.
  5. Chill the brownies again in the refrigerator until the chocolate topping is set and firm.

Mint Brownies Recipe Variations

Different Flavored Fillings: Instead of peppermint, experiment with other extracts like orange, raspberry, or almond for a unique twist on the filling.

Swirl Effect: Before the brownie base is fully set in the oven, dollop spoonfuls of cream cheese or peanut butter on top and use a knife to create a marbled swirl effect. Amounts: I’d suggest beating 4oz of room-temperature cream cheese with a tablespoon of sugar until it is mixable. If using peanut butter, measure ⅓ cup creamy peanut butter. If needed, gently warm it in the microwave for a few seconds until it becomes slightly warm, but not hot.

Layered Surprise: Add a layer of caramel or toffee bits between the brownie base and the mint filling for a sweet and gooey surprise.

Nutty Crunch: Add chopped walnuts, pecans, or almonds to the brownie batter for a delightful crunch. Alternatively, sprinkle nuts on top of the chocolate topping before it sets.

White Chocolate Drizzle: After the chocolate topping has set, drizzle melted white chocolate over the top for a visually appealing contrast and a sweeter taste.

Ingredients

Base

  • 1 cup Flour
  • ½ cup Butter
  • ½ tsp Salt
  • 4 Large Eggs
  • 1 tsp Vanilla
  • 1 can 12 ounces chocolate-flavored syrup
  • 1 cup Sugar

Filling

  • 2 cups Powdered sugar
  • ½ cup Butter
  • 1 tbs Water
  • ½ tsp Peppermint Extract
  • 3-4 Green Food Coloring

Topping

  • 1 package 10 ounce chocolate chips (Semi Sweet or Milk Chocolate – your choice)
  • ½ cup Butter

Instructions

Brownie Base

  • Mix together all ingredients by beating at medium speed for approx 3 minutes. Pour the batter into a greased 9×13 pan and bake at 350 for 30 minutes.

Mint Filling

  • Combine all the filling ingredients in bowl and beat until creamy. Spread over cooled brownies. Refrigerate until set.

Chocolate Topping

  • Melt the chocolate chips and butter microwave in 30 seconds increments, stirring each time, until fully melted and smooth. Spread over cooled filling and chill again.

Notes

*I highly suggest using Peppermint Extract and not Mint Extract. Mint extract makes it taste more like spearmint. Which in my opinion gives it a toothpaste taste!
