This classic Chicken Cabbage Ramen Salad is a deliciously fresh and crunchy salad! Perfect to serve at large dinner parties, holiday parties, and barbecues!
This Chicken Cabbage Ramen Salad Is a salad that will become a go-to over the years! I grew up eating it at BBQ’s, holiday parties, and potlucks! And during the summer months, it would show up for Sunday dinners too! As an adult, I now add apples if I am making it right before attending the meal! The combination of the crunchy cabbage, along with the freshness of the grapes, apples, and then the seasoning of the dressing is the perfect combination! In my opinion, the chopping of the cabbage is the worst part. I love using my Mezzaluna Chopper to cut the head of cabbage up! It makes it so much easier!
RAMEN CABBAGE SALAD
I have no doubt this salad will become a staple for you and your loved ones! If you’re short on time, feel free to use store-bought chopped cabbage and in a pinch, you can even use rotisserie chicken. However, I feel like cubed chicken breast is best!
Ingredients:
- Medium Head of Cabbage, chopped
- 3 Large Chicken Breasts, cubed
- 1 Bunch of Green Onions, chopped
- ½ cup Almonds, sliced or slivered
- 1 Pack of Chicken Ramen, Noodles and seasoning
- 2-3 Cups of Purple Grapes, halved
- 2 Cups of Apples, peeled and chopped (optional)
Directions:
Start by cooking your chicken breasts. You can do this whichever way you prefer — baking, boiling, in a frying pan, or grilling. I love the flavor that grilled chicken adds to the salad, but most of the time I cut up the raw chicken and cook it on the stove top in a frying pan.
While your chicken is cooking, chop up your medium head of cabbage. I like to use my Mezzaluna Chopper to chop it up.
Next, cut up the green onions, grapes, and apples.
After you’ve completed all your chopping and dicing, grab your Chicken Ramen Package and something hard (I use the end of a knife) and smash all your hard ramen noodles. I leave it in the package to do this, but some prefer to take it out of the package and put it in a clear ziplock bag.
Once it is all broken up, open the package and set aside the seasoning package. Take the broken ramen, the sliced almonds, chopped green onions, chicken grapes, and apples and add them to the chopped cabbage. Gently mix everything together.
Lastly, put together the dressing by mixing together the oil, vinegar, sugar, and ramen package in a small bowl. Once mixed, add it to your salad and mix everything together!
CAN I MAKE THIS SALAD AHEAD OF TIME?
If making this salad ahead of time, I suggest waiting to dress the salad until right before you serve it. If you’re also adding apples, wait to chop and add the apples until right before you dress it. When I know I am going to make the salad ahead of time, I generally just opt to not add apples.
HOW LONG DOES THE SALAD STAY GOOD?
Once dressed, it is best if you can eat it in 2-3 days. After that, the cabbage will become soggy and start to wilt. Also, the grapes will lose their crispness. If I am making this to eat for multiples days, I will only dress the salad I plan on eating and then keep a container of the dressing separate in the refrigerator. When I do this, the salad can last approx 5 days.
