Broccoli Salad

A simple, delicious Broccoli Salad that is made with red onions, mandarin oranges, golden raisins, bacon, and slivered almonds and then topped with a delicious creamy dressing! Makes the perfect side dish or potluck dish!

One of my family’s favorite side salads is this classic Broccoli Salad. A month or so ago I took this salad to a get-together and a few of my friends had never had it and I was really surprised! This salad is so good, that sometimes I just make a batch and eat off it for the week for lunch!

HOW TO MAKE BROCCOLI SALAD

Start by chopping the broccoli up! Even if you buy a bag of florets, you will still need to trim them down! I like my broccoli chopped pretty small! It makes it much easier for eating!

Measure approx 8 cups of chopped broccoli in a bowl!

Next, add the mandarin oranges, bacon, red onions, golden raisins, and slivered almonds.

Gently mix all the ingredients together and set the bowl aside.

In a separate bowl mix together the mayonnaise, sugar, and white vinegar!  It will look almost glazy!

Add the dressing over the salad and gently mix everything together to coat all the ingredients!
Refrigerate for at least an hour! Serve and enjoy!

TIPS FOR MAKING BROCCOLI SALAD

  • Refrigerate the salad for at least an hour prior to serving.
  • Make sure to cut your broccoli florets to a manageable size. No one likes trying to maneuver an oversized piece of broccoli into their mouth!
  • I prefer golden raisins, but you could also use regular raisins if you prefer them.
  • If you don’t like almonds, my favorite substitute is sunflower kernels!
  • The red onion adds so much flavor! If you have any onion haters, I suggest leaving them out initially. Then removing a bowl for them ‘haters’ and then adding the onions afterward to the bulk of the salad.

HOW LONG DOES THIS SALAD STAY GOOD?

For about 3 days in the refrigerator! After that, all the ingredients just aren’t at their prime and the dressing will start to thin out and almost appear watery.

IS THIS SALAD HEALTHY?

I wouldn’t consider this to be a ‘healthy’ salad, but there are by far worse. Of course, know that Broccoli is healthy, but the sugary dressing kind of kills the “healthy” aspect!

Ingredients

  • 8 Cups Broccoli Florets trimmed
  • 1 Can Mandarin Oranges 11-14 oz, drained
  • ½ Cup Red Onion chopped
  • 6 Bacon Strips crumbled (approx ½ cup)
  • ½ Cup Golden Raisins
  • ¼ Cup Slivered Almonds

Dressing

  • 1 Cup Mayonnaise
  • ¼ Cup Sugar
  • 2 Tbsp White Vinegar

Instructions

    I LOVE broccoli salad!! I use the same dressing but use broccoli, celery, green onions, bacon, and cheddar cheese!! I’ll have to give yours a try!! =)
