Corn Casserole

This Corn Casserole recipe is so easy to make and a much more substantial side dish to serve versus a bowl of loose corn. It’s the perfect side dish for your big holiday meals like Easter, Thanksgiving, and Christmas. I also love to serve it with Chili or Taco Soup!

This recipe has become a new favorite of mine in the last few years. It is my friend’s Grandmother’s recipe and has been such a nice change from just serving a regular bowl of corn with our dinners! I’ve served it for Thanksgiving, at BBQ’s or even this last winter when I served Taco Soup for dinner! It’s such a universal side dish that can basically be served with any meal!

Now onto how easy it is to throw together!

CORN CASSEROLE RECIPE

Ingredients:

  • 1 Box Jiffy Corn Muffin Mix
  • 1 Can Cream Style Corn
  • 1 Can Nibblets Corn
  • 2 Eggs, Beaten
  • 1 Stick Butter, Melted
  • 8 Ounces Sour Cream
  • 4 oz Diced Green Chilis

HOW TO MAKE CORN CASSEROLE

Gather all your ingredients, preheat your oven to 350 degrees and grease a shallow medium baking dish.

All the ingredients needed to make a corn casserole: Jiffy Muffin Mix, cans of corn, eggs, butter sour cream.

Put all the ingredients in a large mixing bowl: the Jiffy box mix (not prepared, just the powdered mix), can of cream style corn, niblets, 2 beaten eggs, ½ cup melted butter (1 stick), and 8 oz of Sour Cream.

Optional: Add a 4 oz can of Diced Green Chilis for added flavor.

Using a large spoon, combine all the ingredients together until everything is well incorporated.

Bake at 350 degrees for 1 hour to 1 hour and 15 minutes. Just until the top is well browned and a toothpick comes out of the center clean.

JIFFY CORN CASSEROLE
